While my husband, Rob, was away this past weekend, Mom and son, Luke, played – lots of Uno, football and basketball. He got to sleep in my bed, and of course, he got to select some of his favorite meals to cook. (I’m freezing the leftovers to have next time).
On the last evening, he begged to have burgers; so I selected his favorite – sliders. In fact, I even got crafty and made home-made buns, using this recipe from The Kitchn. They were actually quite easy; they simply require advance planning for time to rise.
Using natural ground beef that was locally produced, I cooked the burgers in a rod iron skillet instead of grilling so they wouldn’t slide through the grates. I cooked them about 2-3 minutes/side over medium heat.
I served mine with some home-made guacamole (avacado, onion, tomato, cilantro, lemon juice and salt), but Luke had his standard combo of mayo and ketchup.
To ensure my little guy got his “greens,” I roasted broccoli and sweet potatoes to serve alongside. For those of you who have never roasted broccoli, you must give it a try! All you had to do is spread the chopped broccoli on a cooking tray, drizzle with olive oil, and sprinkle with salt and pepper. I usually cook mine for 15 minutes or more at 400 degrees. I like the edges a little crispy, so don’t be scared to cook them a little longer if need be.
The meal was delicious and I had a happy, appreciative boy to show for it!
