When others ask me what my specialty is, I generally tell them “making healthy food taste great.” Nothing could be more true than with vegetables. I was determined years ago that my child would eat his veggies, and sure enough, he does today. Some creations took more trial and error than others, but my version of grilled asparagus was a snap.
I created this simple recipe long ago on vacation when we were trying to think of healthy ways to eat in, using little else than a grill and a few household kitchen items. The recipe lasted long after vacation ended, and now a family staple.
One bunch of asparagus, trimmed at the ends
3-4 cloves of garlic, chopped finely
1-2 TBSP olive oil
1 TBSP soy sauce
Pour/place ingredients on top of asparagus and mix together before cooking, as in a marinade. Place on grill and cook 5-10 minutes over medium heat, depending on size of asparagus, turning them once or twice. Some like asparagus charred, and others do not. So cook to please yourself and others.
Once off the grill, place them back in the same marinade and re-mix. Serve as is.
