The Easiest Dinner You’ll Ever Make: Pork Verde

Warning: Post is not designed for vegetarians or people with a strong aversion towards pork.

As mentioned in my post last Wednesday about favorite family fallbacks, I will now share my easiest, favorite dinner. My entire family loves it. Guests love it. Even a friend (who told me after the fact that she doesn’t like pork) loved it.

The three “ingredients” are:

Salsa Verde or Green Salsa (I like Arriba or Fontera, but Trader Joe’s makes a great one, too).

PLUS

Pork (I use pork tenderloin because it’s less fatty, but pork shoulder or pork loin works, too. Click here for more information on cuts of pork).

 

PLUS

Crockpot or other slow cooker

 

 

Directions: Poor the entire bottle of salsa over the pork and slow cook all day.

 

After 6-8 hours, break up pork with a fork, then serve with tortillas (corn or flour).

Add your favorite garnishes, such as tomatoes, lettuce, onions, avocado and cheese.
