As I’ve mentioned before, one of Luke’s “top five favorite meals” is tacos. So I try to create as many twists to the usual taco theme as possible to keep my little one happy and nutritiously fed. These include fish tacos, “taco” casserole and turkey tacos. Now that I found a great recipe for tofu tacos at the Whole Foods site, I’ve got a fun dish that’s super healthy, too! Another bonus? These babies are INEXPENSIVE, too!
I made a few minor changes to the original recipe, but I strongly recommend is making a home-made salsa to serve on top of the tofu mixture. Otherwise, the tacos might be a bit bland and dry. Mixed together, they are scrumptious!
Here’s how you can make them yourself.
Serves 4
Ingredients:
- 3 green onions, chopped
- 3 cloves garlic, chopped
- 1 package extra-firm tofu, drained
- 2-3 teaspoons chili powder
- 1/2 teaspoon oregano
- 1/2 teaspoon ground coriander
- 2 teaspoons cumin
- 1/2 teaspoon salt
- 1 can black beans, drained
- 12 corn tortillas, warmed
- Salsa (recipe follows)
- Other favorite taco toppings, such as grated cheese, lettuce and avocado
Step 1: Saute green onions and garlic 2-3 minutes.While cooking, break up tofu in a bowl and add spices.
Step 2: Add tofu mixture to onions and garlic, cooking about 10-1 2 minutes until tofu is slightly browned.
Step 3: Add drained black beans and cook a few more minutes until thoroughly heated.
Step 4: Chop tomatoes or cherry tomatoes, about 1 – 1 1/2 cups. Add onion, cilantro, and jalapeno to taste. Season with fresh lemon juice and salt. (Note: This can be made while tofu is cooking).
Step 5: Place tofu mixture, salsa, and other favorite toppings on top of tortillas and serve!
